This recipe is a favorite in my household! It has the perfect spice and balance of sweetness from the cornbread. I have adapted this recipe from 2teaspoons and altered to my family's tastes.
The changes I made to the recipe were:
1 small can diced green chiles 4.5 ounce can (we use hot)
1 can creamed corn
1.5 lb ground beef
15oz can red enchilada sauce
2 cups of 4 Cheese Shredded Mexican Cheese (extra if needed)
Enchilada sauce is added after the cornbread is cooked.
Once meat is cooked drain and add on top of the sauce.
Smother with cheese to your liking! Bake and enjoy!
