Semi-Homemade Blueberry "Pop-tart"

Here is a quick and easy semi-homemade "Pop-tart" recipe that your family will enjoy for years to come! You can use whatever filling you would like if blueberries is not what your family is in the mood for!


For this recipe you will need:


For the Pop-tart:


Two Pie crusts makes approximately 6 tarts dependent on size:


1 package of pre-made pie crust

Blueberry preserves


Icing:


1/4 c of powdered sugar

1 1/2 Tbsp of coconut milk (regular milk or any nut/rice milk can be substituted one for one)

1/8 -1/4 tsp of lemon juice to desired taste


Preheat oven to 375 degrees.


Lightly dust cutting board with flour, then roll out pie crust to desired shapes. Ensure to use the scraps, just knead and roll out.


Once cut out add 1 -1 1/2 tsp of preserves to each tart, cover and seal with the tines of a fork. If you add too much they can seep out the ends. I do occasionally have this happen to me!



Place them on a cookie sheet line with parchment paper or use a stone cookie sheet. Bake at 375 for 15 mins or until golden brown.


While they are baking we can move forward with the Icing!









Add milk to the powdered sugar and whisk until incorporated. Add lemon juice to taste.








Cool pop-tarts for 10 minutes, add icing, decorate as desired and enjoy!!!
